Corn dough balls in bean soup
I got this from a magazzine, and being such a corn junkie, couldn’t help myself in cooking it.
It´s pretty easy, just mix shredded cheese in with the corn flour and water and you have the dough. Make small balls and fry them. Serve them with fried beans mixed with onion and a little water, the very important ingredient here is called “epazote”, a mexican herb used mostly to give beans a special flavor.
Top with cilantro and milk cream, don’t use that acid heavy cream, this one is more liquid and silky.
There you have, a very mexican breakfast. And extra cheap too!
